"Surgical stainless steel" appears on virtually every instrument listing, usually without explanation. The term covers a family of steels with meaningfully different properties — and knowing the basics lets you read past marketing to what an instrument is actually made of.
Two families do most of the work
- Martensitic grades (the AISI 400 series — 410, 420, 440) can be hardened by heat treatment. They hold an edge and resist deformation, which is why cutting and gripping instruments — scissors, elevators, forceps beaks, scalers — are made from them.
- Austenitic grades (the 300 series — 304, 316) cannot be hardened the same way but offer superior corrosion resistance and are non-magnetic. Trays, cassettes, mirrors handles and non-cutting components are typically austenitic.
Neither is "better" — a 316 scaler would not hold an edge; a 440 cassette would be needlessly hard to form. A well-made instrument uses the right family per component.
The passive layer is the actual magic
Stainless steel resists corrosion because its chromium content (12% upwards) forms an invisible, self-repairing chromium-oxide film. Everything in instrument care is really about protecting that film: chlorides (bleach, saline left to dry) attack it; neutral-pH detergents and proper rinsing preserve it; pitting begins where the film is breached and cannot reform.
Forging, finishing, and what "German steel" means
Quality instruments are forged — shaped under pressure, aligning the grain with the instrument's geometry — rather than cast, then ground, hardened, and finished. Finish is functional: a satin (matt) finish reduces glare under operatory light; polished finishes are easier to inspect for residue. "German steel" in instrument marketing generally refers to steel produced to the German DIN standards long associated with Solingen instrument-making — it describes a specification, not necessarily where the instrument was made.
